Recipe #2: Rex’s Spicy Sweet Potatoes
Ingredients: sweet potatoes, olive oil, pickled jalapeños, pickled banana peppers, and pepperoncini peppers.
-preheat oven to 400°
-lightly coat oven safe cooking pan with olive oil
-Chop up sweet potatoes into bite size chunks and place into oven safe pan
-drizzle desired amount of honey over sweet potatoes and add in pickled peppers (however much you like). Drizzle 1-2 tablespoons of olive oil over the top. Mix thoroughly.
-cover with foil
-bake at 400° for 60 minutesTry something a lil spicy and sweet this holiday season!
