I never heat my honey beyond or above normal ambient summer temperatures during extracting or bottling. Doing so may damage the beneficial enzymes &amp; amino acids, and lower its amazing health benefits.\u00a0 Our honey (and apiaries) were run to the standards of &#8220;Certified Naturally Grown&#8221; (CNG) &#8211; and as of January 2014 &#8211; they approved my CNG status (2015 update &#8211; I have since let the CNG status lapse &#8211; I may reinstate it later on &#8211; but it really seemed to be more of a &#8220;marketing thing&#8221; at the time we were certified.\u00a0 \u00a0It appears that as of 2026 &#8211; they have much more strict guidelines in place for beekeeping.).<\/li>\n<li>We lightly strain (NOT filter!) honey using a single pass to remove only hive debris and bits of wax. We<strong>\u00a0do NOT filter out pollen granules<\/strong><strong>! All of nature\u2019s goodness is in the bottle! You can taste the difference.\u00a0 (And yes &#8211; unfiltered honey <span style=\"text-decoration: underline;\">will granulate<\/span> at cooler ambient room temperatures &#8211; it is STILL honey &#8211; it can be warmed, or used as-is as a spread on your foods).<br \/>\n<\/strong><\/li>\n<li>Our honey bees are queened with reliably sourced queens, bred over the years for behavior, pollination, and honey production, and varroa sensitive hygiene in certain locations. We also select for excellent hygienic behavior in the hives when we are raising our own queens. These girls like their house clean!\u00a0 Long-term goals are for Varroa-Sensitive hygine (VSH) behavior in all bee yards.<\/li>\n<\/ul>\n<p>The end result of all this careful effort is an excellent wildflower honey that we carefully bottle and sell on a limited basis for those looking for the very best local honey available.<\/p>\n<p>Ask your doctor (or qualified specialist) to explain the details and fill you in on the medically recognized benefits of local, organically managed, RAW honey!\u00a0 The FDA says that I cannot make claims as to any medicinal benefits of honey or bee-products such as pollen.<\/p>\n<p>If you have any questions or you live close enough to pick up a jar or two (I don\u2019t ship at this time) please contact me by email or call my bee line at (Dallas area) 469-251-2BEE (2233).\u00a0\u00a0 Deliveries can also be arranged.<\/p>\n<p>Rex Smith<br \/>\nHarmony Hollow Apiaries<\/p>\n<p><strong>Bio:<\/strong><\/p>\n<p><strong>Rex Smith<\/strong> has been beekeeping for 16 years (as of 2026); and for the last 14 years as his full-time vocation.
